3 Super Simple Recipes with Fresh Summer Strawberries

When it comes to summer fruit nothing quite compares to strawberries.  We made our annual trek to the strawberry patch yesterday and are fully stocked up on the scrumptious sweet nuggets. Strawberries can be used in recipes in any number of ways, but we’ve gathered up a few choice recipes that showcase these delicious berries and are easy enough that kids can make them on their own.  Here’s three simple ways to serve fresh summer strawberries.

Strawberries and Cream

With just TWO ingredients, you can’t get much simpler than this. This easy to throw together recipe is the perfect summer treat.

Ingredients:

1 qt (4 cups) strawberries, sliced
2 c heavy cream

Directions:

  1. Place sliced strawberries in four bowls.
  2. Pour cream over strawberries and serve.

Notes:

You can also put the strawberries in the bowls and the cream in a pitcher.  Pass the pitcher around and let everyone add their own cream to their strawberries.

Strawberries and Angel Food Cake

When it comes to strawberries, you won’t find a more classic recipe than this.  Topped with fresh whipped cream, this dessert is sure to be an instant classic for your family.

Ingredients:

1 qt (4 cups) strawberries, sliced
¼ c sugar
½ c whipping cream
1 store bought Angel Food Cake

Directions:

  1. In large bowl, mix strawberries and 1/4 cup sugar; set aside for 10 – 12 minutes.
  2. In small bowl, beat whipping cream with electric mixer on high speed until soft peaks form.
  3. Slice Angel Food Cake; top with strawberries and whipped cream.

Notes:

This is a fun recipe to layer and serve in a small mason jar or glass.

Strawberry Popsicles

We made these for the first-time last summer and they were a big hit.  They are so easy to make and taste like summer on a stick.  And, with no added sugar they’re also a healthy treat that the kiddos will gobble up.

Ingredients:

4 c strawberries (cleaned with stems removed)
zest and juice of 1 lime

Directions:

  1. Place all ingredients in a blender and puree until completely smooth.
  2. Pour into popsicle molds, insert sticks, and freeze 3-4 hours, or until very solid

Notes:

Popsicle Mold: We used little cups for our popsicle molds. It helps to cover them with foil or plastic wrap and then insert the popsicle stick thru the material to keep them in place. Or let the popsicles freeze for about an hour and then add the sticks.

Let’s Talk Lime: If you want to taste the lime, be sure to add the lime zest. If you’d prefer the strawberry to be the main flavor, just use the juice.

Change it Up: Feel free to swap lemon or orange or another flavor for the lime.
