Celebrate Cinco De Mayo with a Taco Twist

Gather your pint-sized señors and señoritas, because it’s Cinco de Mayo!  We’ve got a great shrimp taco recipe to help you throw a kid-friendly fiesta a tu casa.  We even included a few other menu ideas to help you round out the meal, so you can “fiesta like there’s no manana!”

Tortilla Chips with Purchased Guacamole and Salsa
Shrimp Tacos
Pineapple
Corn and Black Bean Salad with Fresh Cilantro
Margaritas or Limeade
Dulce de Leche Ice Cream

Shrimp Taco Recipe

1 avocado, cubed
3 tbsp. red onion, finely chopped
2 tbsp. chopped fresh cilantro
½ (or less) jalapeno pepper, finely chopped
1 tbsp. fresh lime juice
½ tsp. salt
1 lb. peeled and deveined medium sized shrimp
1 ½ tsp. chile powder
1 tbsp. olive oil
8 corn or flour tortillas
1 cup cole slaw

Directions: Combine the avocado, onion, cilantro, pepper, lime juice and ¼ tsp. of the salt in a bowl and set aside.  Combine the shrimp, chile powder and remaining ¼ tsp. salt in a separate bowl.  Heat the oil in a large nonstick skillet over medium-high heat.  Add the shrimp and cook 2-3 minutes per side or until opaque.   Heat tortillas according to the package directions.  Dividing evenly, top each tortilla with the coleslaw, avocado mixture and shrimp.

Note:  The shrimp also tastes great grilled.  And, if your kiddos don’t like cole slaw, swap it out for shredded lettuce.

Serve with other fun toppings: shredded cheese, sour cream, diced tomatoes, mango, your family’s faves!
