A Hearty Beef Stew for a Cold Winter’s Night

Because of the frigid temps we’ve been experiencing this winter, we’ve all been craving some WARM comfort food.  My kids have been requesting this Oven Beef Stew a lot for dinner recently, so I thought I would share the recipe with you.  

The best part of this stew is that it only has five ingredients, many of which you probably already have on hand.  It also slowly roasts in the oven for five hours, which warms your home and fills it with some great aromas.  And, nothing beats back the chill of winter like a hearty bowl of homemade beef stew!

Oven Beef Stew

Serves 4
1 lb stew meat, cut into 1-inch chunks
5-6 potatoes, peeled and cut into medium sized chunks
3-4 carrots, peeled and sliced
1 large onion, chopped
1 can (10.75 oz) condensed tomato soup
1 can (10.75 oz) of water
salt and pepper to taste

Directions: Heat oven to 250°. Place stew meat in Dutch oven or roasting pan (you do NOT need to brown the meat). Add potatoes, carrots and chopped onion on top of the meat.  Season with salt and pepper.  Combine soup and water and pour over meat and vegetables.  Bake covered for five (5) hours.

Notes: Additional meat and potatoes can be added, just be sure the tomato soup and water ratio is 1:1 and the meat and vegetables should be nearly covered with the liquid at the beginning of the cooking time.  This recipe can also be made in the crockpot.

Make it Your Own:  While this stew tastes great as is, if you’d like to jazz it up a bit, try adding a tablespoon of balsamic vinegar, a bay leaf, some garlic or some dried herbs like oregano.  You can also add other vegetables like peas, mushrooms, squash, etc.
